Le St-Urbain is that understated neighbourhood restaurant that punches well above its weight, thanks to the prodigious talents of Chef Marc-André Royal. Dinner is always a delight here, but with the addition one of Toronto’s best, most passionately locavore chefs, this experience will be simply extraordinary. Chef Royal welcomes Ron Mickinlay, Chef de Cuisine at the celebrated Canoe, for an evening of fine wine, the freshest spring ingredients and sustainable seafood. Expect an indulgent feast of fresh oysters, tender greens, vibrant flavours and everything these acclaimed chefs can bring together for the new season, all paired with exciting wines from across Europe.
ABOUT MARC-ANDRÉ ROYAL
Not only does Marc-André Royal own and operate the popular Montreal wine bar Le St-Urbain, opened in 2008, but he also owns and oversees three locations of La Bête à Pain, a concept that includes a restaurant, meals to go, catering, bakery and pastry shop, in Montreal and Laval. Mentored by top chefs such as Pascal Aussignac at London’s Michelin-starred Le Club Gascon and Thomas Keller at New York’s Per Se, he is a passionate advocate of local and sustainable ingredients, and works as a team with his wife and manager Annick Dufresne and Chantal Gervais, who heads up the wine program.
ABOUT RON MICKINLAY
Canoe’s Chef de Cuisine brings more than a decade of international cooking experience from across the UK, Australia and the Middle East. In 2006, he trained under Michelin-starred Chef Tom Kitchin in Edinburgh. After four years, he made the leap to Melbourne, where he helped open Maze by Gordon Ramsay, and later moved on to other esteemed restaurants in Australiana and Oman. Now in Canada, he applies his refined modern techniques to ingredients from BC seaweed to Ontario birch syrup to Fogo Island crab.
