Le St-Urbain is that understated neighbourhood restaurant that punches well above its weight, thanks to the prodigious talents of Chef Marc-André Royal. He brings to his kitchen the serious skills that he honed at renowned restaurants like Montreal’s L’Express and Whistler’s Araxi, with a focus on all that is fresh, local, and seasonal. For this deeply flavourful dinner, he welcomes one of the 2019 winners of the Lauriers de
la gastronomie québécoise Stéphane Modat, formerly of Fairmont Château Frontenac and currently chef- owner of Le Clan in Quebec City. This talented duo will offer dishes prepared with finesse and paired with exciting private-import European wines chosen by Sommelier Chantal Gervais for their food friendliness. Expect an evening of fine vintages, deep flavours, and welcoming conviviality in one of Montreal’s favourite spaces. Lesley Chesterman, the long-time Montreal Gazette restaurant critic, will emcee the event.
ABOUT MARC-ANDRÉ ROYAL
Not only does Marc-André Royal own and operate the popular Montreal wine bar Le St-Urbain, opened in 2008, but he also owns and oversees three locations of La Bête à Pain, a concept that includes a restaurant, meals to go, catering, a bakery, and a pastry shop, in Montreal and Laval. Mentored by top chefs such
as Pascal Aussignac at London’s Michelin-starred Le Club Gascon and Thomas Keller at New York’s Per
Se, he is a passionate advocate of local and sustainable ingredients, and works as a team with his wife and restaurant manager Annick Dufresne and with Sommelier Chantal Gervais, who heads up the wine program.
ABOUT STÉPHANE MODAT
Originally from Perpignan, Stéphane Modat has been living and cooking in Quebec City for over a decade. He worked at L’Initiale and Utopie before taking the helm at the Fairmont Château Frontenac’s Champlain restaurant. Over the next six years he brought the legendary room to new heights and, in 2019, was crowned Chef of the Year at the second annual Lauriers de la gastronomie québécoise awards. He then decided to open his own restaurant, Le Clan, in the former Café de la Paix location, where he focuses on local, sustainable ingredients.
TASTY FACT
Farro is an ancient grain from Mesopotamia with a nutty flavour, many health benefits, and a pleasantly chewy texture. Contrary to popular belief, it’s not a single grain, but a collective name for three species of hulled wheat: spelt, emmer, and einkorn.
