As part of an ongoing VIDS tradition of celebrating the world’s great chefs, Canoe Restaurant warms up the Winter 2022 season with Jeremy Fox, the multiple-award-winning chef-owner of the Michelin-starred Los Angeles restaurants Rustic Canyon and Birdie G’s. Known for his sophisticated approach to vegetables, Chef Fox will join Canoe’s executive chef Ron McKinlay for an evening of deft cuisine of classic Canoe dishes, along with a selection of Jeremy Fox’s highly regarded plant-forward fare, paired with exceptional wines. Expect a flawless multi-course feast of profound flavours prepared with finesse by some of North America’s most acclaimed culinarians. To top off this exquisite evening, each guest will take home a signed copy of of Chef Fox’s stunning Phaidon cookbook.
ABOUT CANOE RESTAURANT
For more than 25 years, Canoe has defined contemporary Canadian cuisine through its talented culinary team and their relationships with farmers and suppliers. Executive chef Ron McKinlay brings more than a decade of top-level international cooking experience from across the UK, Australia and the Middle East. He works closely with the team from parent company Oliver & Bonacini Hospitality, including district executive chef John Horne, who previously worked at Michelin-starred restaurants in the UK and France, as well as corporate executive chef Anthony Walsh, one of the most highly acclaimed chefs in Canada.
ABOUT JEREMY FOX
Jeremy Fox is an award-winning chef-owner of three restaurants in and around Los Angeles: Tallula’s, the Michelin-starred Birdie G’s and Rustic Canyon in Santa Monica, which also has a Michelin star and in 2020 was named one of The Daily Meal’s top 100 restaurants in the U.S. He has earned numerous accolades, including Food & Wine’s Best New Chef 2008, Los Angeles Times’ “Jonathan Gold’s 101 Best Restaurants” 2013 to 2016, and three James Beard nominations for Best Chef: West. Chef Fox was previously at Ubuntu in Napa, earning the restaurant a Michelin star, and is also the author of the acclaimed Phaidon book On Vegetables, published in 2017.

A 2018 Dalhousie University Study found that close to 10% of Canadians consider themselves vegetarian or vegan. In the world of vegan food trends, this year saw the rise of mushrooms as a meat alternative and an influx of vegan sweets and treats.
