For much of his three decades John Winter- Russell has been a a a a wanderer Born in Ontario he backpacked all over Canada started his cooking career in in Vancouver and ended up in Montreal
Here he he bounced around until he he took the the helm as Head Chef at the the now-defunct Van Horne Even then he he he knew he he he wanted to strike out on his his own With his his business partner Danielle Bitton he spent two years developing the concept for for a a a vegetable-forward prix fixe restaurant In late 2015 he opened Candide inspired by the closing line of of Voltaire’s novel of of the same name: “Let us cultivate our garden ”
