CHEWY MAPLE COOKIES
Ingredients:
1/2 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup real maple syrup
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt1 cup flaked coconut
Directions: Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. In a mixing bowl, cream shortening
and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed. Combine flour, baking powder and
salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 2-inches apart onto greased
baking sheets. Bake at 375 degrees F (190 degrees C) for 10-12 minutes.

CHICKEN FRANCESCA
•Butter 1/2 cup (this recipe turns out best with real butter. Cannot get
same results with margarine)
•2 large or 4 medium boneless chicken breasts cut in half (quartered if
large)
•2 eggs, well beaten Dip chicken in egg to coat
Mix in a bowl:
•1 cup soft bread crumbs
•3/4 cup freshly grated Parmesan cheese (you can use pre-shredded)
• 1+1/2 tsp Oregano •1+1/2 Basil •1 tsp Thyme •1/2 tsp Rosemary
•1/4 tsp Marjoram (optional) •1 tsp Garlic Powder •1/2 tsp Onion
Powder •1/2 tsp sea salt
•1/4 tsp ground black pepper Mix well!
Heat a baking dish with 1/4 cup butter in a 350* oven. Let butter melt completely. Dip egg coated chicken into
breadcrumb mixture. Place chicken pieces on the melted butter in the baking dish. Add a chunk of butter on top of
each piece of chicken. At this point you might wish to add a bit more grated Parmesan. Cover dish with tinfoil. Bake
at 350* for 20 minutes. Remove tinfoil. Continue baking for an additional 15-20 minutes. Insert a meat thermometer
and make sure it reads 165 degrees. This recipe has been in the family on my Italian side for four generations. Due to
the amount of butter this dish is made only 2-3 times a year. Mangia!
