PEOPLE
Create a zoning chart and make sure that you have the right coverage for the weekend. Factor in the need for a replenishment team each morning (and possibly evening as well!) and expect to have the steamer going all day, each day.
Review the schedule to make sure it is optimal – it is easier to cut back than be caught short-staffed.
Make sure the team is well-informed of your plan of action.
