In her Watkinsville home bakery, Wiggins makes some delicious apple bread
Apple Bread
3 eggs, slightly beaten
2 cups sugar
1 cup vegetable oil
1 tablespoon vanilla
3 cups all-purpose flour 1 tsp. baking soda
1 tsp. ground cinnamon
4 cups chopped pared, cored apples 1 cup chopped pecans
Topping:
2 tbsp. sugar
1⁄2 tsp. ground cinnamon
1. Preheat oven to 325°F. Grease and flour two loaf pans.
2. Stir together the eggs, sugar, oil and vanilla until the ingredients are well mixed. 3. Combine flour, baking soda and cinnamon in a separate bowl. Stir into liquid
ingredients just until evenly mixed. Sir in apples and pecans. Divide evenly between the two prepared loaf pans.
4. Prepare topping. Combine sugar in cinnamon in a small bowl. Sprinkle over the top of both loaves.
5. Bake in preheated oven for one hour and 10 minutes or until a wooden pick inserted in centers comes out clean. Cool in the pans on wire racks for 10 minutes. Run a thin knife around the edges of the pans. Remove the breads from the pans to wire racks to cool. Wrap them tightly in aluminum foil. Store at room temperature.
