Founded by Dillon’s Small Batch Distillers, the society is currently accepting new members for its unique association of like-minded individuals who love nothing more than experiencing the latest samples in the cocktail world and, at the same time, discovering what goes into making some of Canada’s most-loved craft spirits.
Not every distillery can deliver the whole package. Dillon’s is unique in that, not only does it make award-winning rye whisky, gin, vodka, and other spirits, but it also has its own line of bitters and a range of tasty liqueurs — most of which are made with local fruit sourced from its neighbours in the Niagara region. Everything you need for great cocktails can be found under one roof at Dillon’s, including an in-house mixologist, Owen Walker, known for his creative drink programs at Toronto’s Bar Isabel, El Rey, and the Michelin-starred Quetzal.
So how does it work? Membership begins with a welcome kit, designed to help you get primed for “at-home cocktailing” and keep you busy until the first cocktail kit lands. Then, get ready to unbox four annual home deliveries that include all the premium ingredients needed for a new craft cocktail experience —
and a few bonus treats, like bottled cocktails or samples of forthcoming releases. This just might be the life hack needed to plan your busy fall schedule. From cozy evenings at home to holiday get-togethers and cocktail parties, members of The Sipping Society receive curated kits to assist with the social obligations
of the season.
Alongside the kits included in The Sipping Society, Dillon’s is introducing two
additional cocktail kits to usher in the fall, available both at Dillon’s Small Batch Distillers and online. The first is the Pear Collins, which features a combination of Dillon’s Pear Gin, rosemary and clove syrup, lemon juice, and pear bitters, garnished with pear slices and your choice of thyme or rosemary. The second is a deliciously warm Fall Cinnamon Spice Mule consisting of Dillon’s Vodka, orange liqueur, cinnamon syrup, ginger bitters, ginger beer, and a cinnamon stick garnish. Not only does Dillon’s offer the chance to taste each cocktail but, also, the opportunity to learn how to craft select syrups at home.
While the cocktail kits tend to get all the attention, serious spirit geeks also have a lot of love for the opportunity The Sipping Society allows to do a deep dive into the world of craft whisky, gin, absinthe, and pretty much everything else Dillon’s makes. Between member-only events, distillery exclusives, compli- mentary tours, and first crack at sought-after limited releases like the annual Dillon’s Rye Whisky release, The Sipping Society offers an insider’s access to all the happenings at one of the country’s foremost craft distilleries.
