IRISH SODA BREAD
Ingredients
3 cup f lour
1/2 teaspoon caraway seeds *optional
1/4 teaspoon salt
1/2 cup sugar
1 ¼ cup milk
1 cup raisins (or to taste)
1 egg beaten
2 tablespoons melted butter
3 teaspoons baking powder
Instructions
Mix all ingredients together by hand with wooden spoon. Mixture will be heavy and
thick. Pour into greased and f loured loaf pan. Bake at 400 degrees. Sprinkle with f
lour and sugar if desired. Bake for 50 minutes or until tester comes out clean.
This recipe was given to my husband, Ron, by a third grade student in his class
in the early 1970’s whose mother was from Ireland.
HELEN WRIGHT’S POPOVERS
Ingredients
2 eggs
1/2 cup f lour
1/2 teaspoon salt
1/2 cup milk
Instructions
Beat eggs and mix in the rest of the ingredients. Put into greased and f loured mu n
cups. Makes 6-7 popovers. Bake at 400 degree oven for 30-40 minutes. Serve warm.
My Dad, John Hubler loved when I made these popovers with dinner.
