BEAU VINE’S CRÈME BRULEE




       1 ¾ cups heavy cream      Combine heavy cream, milk, and
       1 ¾ cups milk             vanilla bean and mix thoroughly.
                                 Heat until it boils then remove
       ½ vanilla bean, split
                                 from heat and steep 10 minutes
       7 egg yolks
                                 with vanilla bean.
       2 whole eggs
       ½ cup sugar               Scrape bean seeds into the milk
       brown sugar               mixture. Mix eggs and sugar. Add
                                 the milk mixture in a steady stream
                                 and skim the foam.

                                 Divide into 8 small ramekins (about 5 oz. each) set in a baking dish and pour enough hot water around
                                 ramekins to come ½ way up the sides. Place in 325°F oven for approximately 25-30 minutes, until just
                                 set (trembles slightly).

                                 Cover top with brown sugar. Caramelize under broiler.
