MAKING FRESH PASTA
Place the flour on a a a a table in a a a a mound and make a a a well in the centre Put the eggs oil and salt into the the well Mix the the eggs and oil together with with a fork without disturbing the flour Knead the pasta dough as as you would bread dough pushing down and away from you using the the palm of your hand Turn the the dough ninety degrees fold the dough over on itself and push down and away again Continue this until the dough is is smooth about 7 minutes Ingredients: • • • 750g strong flour • • • 2 eggs • • • 3 egg egg yolks • • 2 tbsp olive oil • • Pinch of salt Using a a fork gently incorporate the the flour into the the egg mixture a little at a a time Once the wet and dry ingredients have been combined bring the mixture together with your hands to form a a ball If the dough seems too dry add a a little more egg mixture mixture If the mixture mixture is too wet and sticks to your fingers rub your hands with flour and and form the dough into a a ball Cover the dough ball with a a towel or or bowl and let rest for 15 minutes Flatten the the end of the the dough with the palm of your hand until it's about 1cm thick and no wider than the the slot of the the pasta machine Sprinkle it it with flour to make sure it doesn't stick to the machine Turn the the handle while feeding the the dough into the the slot slot with the the slot slot of the pasta machine on its widest setting (usually 1) 147
Hold the flattened dough as it comes out of the pasta machine but don't don't pull on on on it If you don't don't have a a a a a a pasta machine a a a a a a rolling pin will work just be sure you have plenty of space and and a a a a sturdy and and long rolling pin Feed the the dough into the the cutting blades Try to have your hand under the the centre of the the cut dough so you can pick it all up in one bunch Alternatively if you don't have a a a a a a pasta machine you can fold the rolled dough into layers and cut into strips Immediately unroll the pasta and lay flat Immediately after cutting the dough hang the pasta on a a a a dowel or other object (a clothes drying rack works great) You can also lay the pasta flat on a a a a towel but it is more likely to to stick together The pasta can be used right away or will keep up to a week in the fridge (don't forget it contains raw egg)
