                                                                           Daddy’s Special Mediterranean Chicken Pasta Bake

Ingredients
3-4 chicken breasts
150g pasta (penne, macaroni, shells or anything)
25g of chorizo
1 large onion
3 cloves of garlic
1 tin of chopped tomatoes
200g of mixed Mediterranean vegetables (frozen)
40g of frozen peas
40g of frozen sweetcorn
Cheddar cheese (as much as you want)
Method
1. Pre-heat oven to 200C degrees.
2. Dice onion into small pieces and chop chorizo into small cubes. Fry together
over gentle heat for 5 minutes. Add crushed garlic, and fry for a further 3
minutes.
3. Cook pasta at the same time as per the instructions (approx. 10 mins.)
4. Chop chicken breasts into small pieces (2cm x 2cm).
5. Empty pasta and onions, garlic and chorizo into oven dish and mix in the
chicken pieces, tin of tomatoes and all the vegetables. Stir well to ensure
properly mixed.
6. Sprinkle grated cheese over the top.
7. Cover oven dish with foil and place in hot oven.
8. It will need 45-55 minutes to cook, depending how small you have chopped
the chicken. Stir at least twice during this time to ensure it cooks through,
separating chunks of chicken that have stuck together.
9. Cut chicken to ensure fully cooked before serving. Serves 3.
