                                                             a UNESCO World Heritage Site.

                                                             This is becasue it preserves one of
                                                             the most complete and historically
                                                             significant examples of a British colonial

                                                             Atlantic port city. It reflects centuries of
                                                             trade, defence, government, and cultural
                                                             interaction across the Caribbean, Africa,

                                                             and Europe.

                                                              national dish, pairing steamed or fried
                                                              flying fish with a smooth, cornmeal-
                                                              and-okras base similar to polenta.
                                                              The fish is often seasoned with herbs,
                                                              lime, and spices, then served with a
                                                              rich gravy. It reflects Barbados’ fishing
                                                              heritage and is traditionally enjoyed on

                                                              Fridays and Saturdays.
