K.I.S.S. Dinner Tonite (Keep It Simply Satisfying) From Tonia Turner
For a simply satisfy- ing weeknight meal that’s sure to get your family in the dinner seats, try this quick stir-fry recipe and re- freshing citrus punch.
Spicy Turkey and Green Bean Stir-Fry
11⁄2 cups basmati rice
11⁄2 pounds green beans, trimmed
3 tablespoons vegetable oil
1⁄2 teaspoon sugar
3⁄4 pound 99% lean ground turkey
1 clove garlic, minced
1 small half-sour pickle, finely chopped 2 teaspoons Asian chile paste
1 cup fat-free low-sodium chicken broth 2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry or rice vinegar
(not seasoned)
2 teaspoons cornstarch
DIRECTIONS: Bring a pot of water to a boil. Stir in the rice, cover and boil until tender, about 18 mins.; drain well and keep warm. Meanwhile, preheat the broiler. Toss the green beans, 11⁄2 tablespoons vegetable oil and the sugar on a rimmed baking sheet. Broil, stirring once, until the beans are tender and charred, about 8 mins. Heat the remaining 11⁄2 tablespoons vegetable oil in a skillet over high heat. Add the turkey and cook, breaking it up with a wooden spoon, until browned, 3 mins. Add the garlic, pickle and chile paste and cook until the garlic is slightly golden, about 3 mins. Whisk the chicken broth, soy sauce, sherry and cornstarch in a bowl. Add the green beans to the skillet with the turkey mixture and cook, stirring, 1 minute. Add the soy sauce mixture and cook, stirring occasionally, until the sauce thickens slightly, about 3 minutes. Serve with the rice.
Crostini Triangles
1 can (10 oz.) Refrigerated Pizza Crust
2 Tbsp. olive oil
2 cloves garlic, minced 1⁄2 cup (2 oz.)
Italian Blend Shredded Cheese or Fancy Parmesan Shredded Cheese
DIRECTIONS: Heat oven to 425°. Lightly grease a cookie sheet. Unroll dough; press to a 12 x 12 square. Using a sharp knife, cut dough into 4 squares; cut each square diagonally in half, forming 8 triangles. Transfer triangles to cookie sheet. Mix oil and garlic; brush over triangles; top with cheese. Bake 12- 14 mins. until golden brown.
Citrus Iced
TeaPunch
2 bottles Iced Tea with Lemon 1 cup orange juice
1 each lemon and lime sliced
DIRECTIONS FOR ALL: Mix tea with orange juice in pitcher; stir in sliced fruit. Serve in ice-filled glasses. Garnish with a slice of orange.
DIRECTIONS FOR ADULTS: To transform from mocktail to cocktail just add tequila or rum.
