   Chicken Nachos
 This delicious and easy to prepare recipe is sure to be a big hit! Serve with sour cream and guacamole. Be creative!"
2 cloves garlic, crushed
6 green onions, sliced, white parts and tops separated
3 tablespoons canola oil
1 shredded, cooked, whole chicken breast
salt and pepper to taste
1 cup salsa
1/2 (12 ounce) package tortilla chips
1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
1/2 large tomato, diced
Directions: Preheat oven to 350 degrees F (175 degrees C).
In a 12 inch skillet over medium heat, cook and stir the gar- lic and white parts of the green onions in canola oil until tender. Mix in shredded chicken, salt and pepper. Toss until well coated with oil. Stir in the salsa.
Arrange tortilla chips on a large baking sheet. Spoon the chicken mixture over tortilla chips. Top with Cheddar/Mon- terey Jack cheese blend and tomato. Bake in the preheated oven 10 minutes, or until cheese has melted. Remove from heat and sprinkle with green onion tops before serving.

March Madness is a phenomenon that grips the national sports psyche from the second week of March through the first week of April.
These tournaments determine the national champions of college basketball. Here are some recipes that will make your family and friends your biggest fans.
 Restaurant Style Buffalo Wings
 This one gets high fives for being so easy to make.
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper 1/4 teaspoon salt
10 chicken wings
oil for deep frying
1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper 1 dash garlic powder
Directions: In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and re- serve for serving.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.
  Seven Layer Taco Dip
 If you want to be the hit of the party, make this dish.
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg let- tuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese
Directions: Preheat oven to 350 degrees F (175 degrees C).

   Brown Sugar Smokies
 Bacon-wrapped yummies! You can make these little smokies on skewers or toothpick them to secure.
1 pound bacon
1 (16 ounce) package little smokie sausages
1 cup brown sugar, or to taste
Directions: Preheat oven to 350 degrees F (175 degrees C).
Cut bacon into thirds and
wrap each strip around a little
sausage. Place the wrapped sausages on wooden skewers, several to a skewer. Arrange the skewers on a baking sheet and sprinkle them liberally with brown sugar.
Bake until bacon is crisp and the brown sugar melted.
   Guacamole
 You can make this avocado salad smooth or chunky depending on your tastes.
3 avocados -peeled, pitted, and mashed 1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro 2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)
Directions: In a medium bowl, mash
together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
