Beetroot Raita by Sumithra – G8
Beetroot raita is a healthy, easy to make snack which can also be served as a perfect side dish for chapattis or
naan. I have mainly used beetroot in this recipe because it adds a lot of nutrients to the dish whilst also
making it visually appealing. I have also used yoghurt (curd) that adds a really refreshing taste to it. Sev and
cornflakes have been added to make the raita crunchy. On the whole, the dish is packed with nutrition and
filled with lip-smacking ingredients. .
Ingredients
1. Beetroot-1, small (finely chopped or blended)
2. Yoghurt (curd) - 1 cup
3. Cornflakes-50 grams
4. Sev-50 grams
5. Salt- as per required
6. Coriander leaves- finely chopped for garnishing
7. Mint- finely chopped for garnishing
8. Lemon – a wedge
9. Green chilies - 2 (finely chopped)
10. Onion - 1 (finely chopped)
Now, let’s take a look at the recipe which follows three simple steps:
1. First, transfer the yoghurt (or curd), beetroot, onion and salt into a large bowl and mix them well.
2. Add green chilies, cornflakes and sev. Mix well, taking care that you don’t break or crush the sev and
cornflakes.
3. Finally, garnish with coriander leaves and mint. Squeeze a wedge of lemon as a finishing touch.
Decorate as you please and serve!
