               INGREDIENTS                           DIRECTIONS

               1/2 cup green olives                  Prepare the Tomato, Mozzarella and
                                                     Olive Tapenade Tart
               1/2 cup black olives
                                                     Preheat oven to 400 degrees Fahrenheit
               1 clove garlic                        (200 degrees Celsius) and line a baking
                                                     tray with parchment paper.

               1/2 teaspoon thyme                    In a food processor or with a hand
                                                     blender, blitz the olives, garlic, thyme,
               4 teaspoons Olive Oil                 olive oil, and vinegar together to form
                                                     the tapenade.
               1 teaspoon Red Wine Vinegar
                                                     parchment paper and, with a knife,
                                                     score a two-centimeter border around
                                                     the pastry so it looks somewhat like a
               4 vine tomatoes/ 1 cup cherry         picture frame.
               tomatoes, sliced                      Spread the tapenade inside the border
                                                     of the pastry and layer the tomatoes,
               1/2 cup chopped mozzarella            mozzarella, and onion over.

               1 small red onion, sliced             Bake for 25 to 30 minutes until the sides
                                                     of the pastry turn golden. Remove from
               fresh basil, to garnish (optional)    oven and serve warm.
