                  INGREDIENTS                            DIRECTIONS

                  Vegetable Medley Kugel                 Prepare the Vegetable
                                                         Medley Kugel
                  1 medium onion
                  3 eggs                                 Preheat oven to 425 degrees
                                                         Fahrenheit.
                  1 tablespoon Kosher Salt
                  1 teaspoon pepper                      Shred all of the vegetables
                  1/2 cup oil                            in the food processor.
                  1 large parsnip, peeled                Spray a nine- x 13-inch pan
                  1 medium zucchini                      with nonstick spray. Pour
                  2 medium potatoes, peeled              all the shredded vegetables
                                                         into the pan. Add the eggs,
                  2 small or 1 large sweet               salt, pepper, and oil. Mix
                  potatoes, peeled                       well and pat down so the
                  4 carrots, peeled                      top is even.

                                                         Bake one hour and 15
                                                         minutes.
