GF Blueberry Orange Muffins Makes 1 Dozen
Ingredients
Cooking Spray
1/2 Cup Unsalted Butter, Softened
1 Cup Granulated Sugar
1/4 Cup Brown Sugar
2 Eggs
1/2 Cup Dry Instant Vanilla Pudding Mix 1/2 Cup Buttermilk
1 1/2 Cups GF Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Kosher Salt
1 Teaspoon Vanilla Extract or Vanilla
Bean Paste
1/2 Teaspoon Orange Zest
1 Tablespoon Orange Juice
1 1/2 Cup Frozen Blueberries
Directions
Glaze Ingredients
3/4 Cup Powdered Sugar
2 Tablespoons +1 Teaspoon Orange Juice
Glaze Directions
1 Combine powdered sugar and orange juice in a small mixing bowl.
2 Drizzle glaze over cooled mu ns with a fork or a spoon.
1 Preheat oven to 425° F. Spray mu n tin with cooking spray or line with paper baking cups.
2 In a large mixing bowl cream the butter and the sugars together until light and u y. Add one egg at a time, making sure the egg is completely mixed into the batter.
3 In a medium size bowl mix together our, baking powder and salt.
4 Add the vanilla pudding mix and half of the our mixture and stir until combined. Add the buttermilk and stir to combine. Add the remaining amount of our along with
vanilla extract, orange zest and juice and stir until combined.
5 Fold in the blueberries. Scoop 1/4 cup of the batter into the mu n tins. Place in the oven and immediately reduce the heat to 375°F. Bake for 20-25 minutes. Remove from oven and let cool in the pan. When mu ns have cooled, follow the glaze directions.
