Bacon Cheddar Burritos
Makes 6 Egg Burritos
6 Flour Tortillas
2 Tablespoons Olive Oil
2 Cups Frozen Hash Browns
Cooking Spray
12 Eggs
12 Slices Black Forest Bacon, Cooked, Diced 2 Cup Cheddar Cheese, Shredded
Salt and Pepper to Taste
1 Tablespoon Chives, Finely Chopped Directions
Preheat oven to 375°F. Cook the tortillas over an open ame to slightly grill and to become pliable (about 30 seconds).
2 In a large non-stick sauté pan on medium heat, heat 2 tablespoons olive oil for 1 minute or until hot. Add hash browns and cook on high for 5 minutes (do not stir). Once hash browns have browned on one side, ip and cook on the other side for 5 minutes. Remove from pan and set aside.
3 Crack the eggs in a mixing bowl and wisk with a fork.
4 Add more oil to the pan if needed or spray with cooking spray. Pour egg mixture into the pan and gently pull eggs across the pan until small curds appear. Contin- ue to cook pulling, lifting and folding eggs until no visible liquid egg remains.
5 Add the bacon, hash browns and cheddar cheese into the pan, combine and stir to incorporate. Add salt and pepper to taste and the chives and remove from heat.
6 Place the cooked tortilla in the middle of a 12’’ piece of foil or parchment paper. Place 1/2 cup of the egg mixture in the center of the tortilla, fold over sides and roll to form a burrito. Continue until all of the egg mixture is gone and place the burritos in a large ziplock bag. Place in the freezer for up to 3 months or serve immediately.
