GF Piña Colada Pancakes Makes 4 Servings
Ingredients
1 1/2 Cup GF Pancake Mix
1/2 Cup Dry Instant Vanilla Pudding Mix 2 Eggs
1/4 Cup Vegetable Oil
2 Cups DF Coconut Milk
Cooking Spray
4 Rings Fresh Pineapple, Sliced 1/8 Inch
Toppings
1/2 Cup Fresh Pineapple, Cubed 1/4‘’ Maraschino Cherries
2 Tablespoons Sweetened, Shredded
Coconut, Toasted Directions
Coconut Syrup Ingredients
1 (14) Ounce Can Sweetened Condensed Milk
1/2 Teaspoon Coconut Extract 1/2 Teaspoon Butter Extract
Syrup Directions
1 Mix together all the ingredients in a microwave safe bowl.
2 Microwave for 30 seconds to warm.
1 Preheat a nonstick griddle or nonstick sauté pan on medium heat.
2 Place pancake mix and dry pudding mix in a medium mixing bowl. Add eggs,
vegetable oil and coconut milk and mix until combined (do not over mix).
3 Spray the griddle or nonstick pan with cooking spray. Place the rings of pineapple in the pan (make sure you have space between your pineapple rings). Add 1/4 cup of the pancake batter over each pineapple ring covering the pine- apple completely.
4 Follow syrup directions listed above.
5 Cook for 5-7 minutes. Flip the pancake with a spatula and cook on the other side for 3 minutes. Remove from heat and top with syrup, fresh pineapple, shredded coconut and a maraschino cherry.
