   Tropical Chicken Salad
Makes 1-2 Serving
Dressing Ingredients
Juice 1 Lime
2 Tablespoons Coconut Milk 1/4 Teaspoon Kosher Salt
Dressing Directions
1 In a small mixing bowl combine lime juice, coconut milk & salt.
2 Serve over Salad.
 Ingredients
1 Head Butter lettuce, Torn
1/2 Cup Rotisserie Chicken, Sliced or
Shredded
1/4 Cup Red Bell Pepper, Sliced 1/8 “ 1/4 Cup Cucumber, Diced 1/4”
1/4 Cup Mango, Sliced 1/4 “ Sticks
1 Tablespoon Mint, Roughly Chopped 2 Tablespoons Whole Cashews
1 Tablespoon Coconut, Shredded,
Toasted
Directions
     1 Place clean dried lettuce leaves on a serving plate.
2 Top with chicken, bell pepper, cucumber, mango, mint, cashews and coconut.
3 Follow dressing directions and dress salad with desired amount of dressing. (If using the jar or bag method, see below, place dressing in a separate container until you are ready to eat.)

I love salads! You can make any salad in a jar or in a ziplock bag and take them wherever you go. Make sure you put the dressing in a separate container to keep your salad crisp. Just pour your
 dressing over the greens and toss it up in the jar or baggie.
