1/4 Cup Ranch Dressing 1/4 Cup Red Salsa
Salsa Ranch Dressing Directions
In a small mixing bowl, mix together until combined.
1/4 Cup Rotisserie Chicken, Shredded 3 Tablespoons Salsa Verde
1 Cup Cooked Quinoa
Toppings
2 Tablespoons Guacamole, Pre-made
2 Tablespoons Cheddar Cheese, Shredded 2 Tablespoons Corn Relish (see page 79) 1/4 Cup Romaine, Chopped
1/4 Cup Peppers, Cut in 1/8” Slices, Grilled 1/4 Cup Red Onion, Cut in 1/8” Slices,

Corn Chips
Directions

In a small mixing bowl mix together rotisserie chicken and salsa verde until combined. Heat in the microwave for 1 minute or until hot.

2 Place the quinoa in a serving bowl.
3 Top quinoa with chicken mixture and then top with guacamole, cheese, corn relish, romaine, peppers, onions and corn chips.
4 Follow salsa ranch directions and serve on top of quinoa bowl. +++
