1 Pound Chicken Breast, Boneless Skinless, Cut in 1’’ Cubes
1 Green Bell Pepper, Cut in 1’’ Cubes 1 Red Bell Pepper, Cut in 1’’ Cubes
1 Yellow Bell Pepper, Cut in 1’’ Cubes 1 Red Onion, Cut in 1’’ Cubes
1 Tablespoon Olive Oil
2 Teaspoons Taco Seasoning (of your
choice)
1 Teaspoon Kosher Salt 8 Corn Tortillas

Cotija Cheese, Crumbled Cilantro, Torn

Protein: Sausage, Shrimp
Mix Ins: Corn On The Cobb Spice It Up: Old Bay Seasoning
1 Soak 8 wooden skewers in water for at least 30 minutes. (You can also use metal skewers)
2 Preheat grill or a grill pan to medium/high heat.
3 Skewer the kebabs on wooden or metal skewers alternating chicken, bell pepper,
and onions. Skewer all the chicken, bell peppers and onions.
4 Drizzle the kebabs with olive oil and then season with taco seasoning and salt.
5 Grill for 5-7 minutes per side or until chicken is cooked through.
6 Serve on corn tortillas with the toppings of your choice.
You can literally skewer anything if you think out of the box. Take a recipe and chances are, you can ‘skewer’ it.
