Snickerdoodle Ice Cream Sandwich

Cookie Dough Ingredients
Makes 6 Sandwiches
1 Cup Butter Shortening or Butter (at room temperature)
3/4 Cup Granulated Sugar
1 Egg, Whole
1/2 Teaspoon Vanilla Bean Paste or Vanilla Extract 1/4 Teaspoon Almond Extract
1 1/4 Cup GF Flour
1/2 Cup Dry Instant Vanilla Pudding Mix
Directions
1/4 Teaspoon Baking Soda 1/2 Teaspoon Baking Powder 1/2 Teaspoon Cream of Tarter 1/4 Teaspoon Salt
1 Teaspoon Cinnamon

Coating
1/2 Cup Sugar
1 Teaspoon Cinnamon
1 Preheat the oven to 350 F.
2 In a mixing bowl cream together butter and sugar with a spatula (you can also do
this is an electric mixer but you will get u er cookies if you do it by hand).
3 Stir in the egg and mix to combine. Add vanilla and almond extract and stir to combine.
4 Add our, vanilla pudding mix, baking soda, cream of tarter, baking powder, salt and cinnamon and stir until combined.
5 Combine coating ingredients in a small bowl and set aside.
6 Grab about a golf ball sized amount of dough and place in the cinnamon sugar
mixture and roll to coat.
7 Place cookie dough ball on a parchment lined baking sheet (you can t 9 cookies on one sheet).
8 Bake for 11 minutes, remove from oven and let cool.
9 Place a scoop of the rocky road ice cream on one cookie and top with another cookie to form a sandwich.
