Preface

      It  is  no  surprise  to  anyone  that  the  safety  and
      security  of  food  are  growing  concerns.  With  the
      increasing  globalization  of  the  food  supply  and
      increase in food recalls, retailers and consumers are
      demanding  stricter  guidelines  for  food  safety.
      Federal  regulators  admit  they  need  help  and  are
      looking  to  food  safety  management  systems  to
      strengthen the safety of the  food chain.

      There  is  no  doubt  that  certification  is  here  to  stay
      as  proven  by  the  fact  that  the  largest  retailers,
      manufacturers,  and  worldwide  companies  are
      already  mandating  their  suppliers  be  certified  to
      one  of  the  food  safety  management  systems
      approved  by  the  Global  Food  Safety  Initiative
      (GFSI). There is no better time than now to become
      educated on certification and learn what impact it is
      going to have on the global food chain.
