NOT-SO-OLD-FASHIONED APPLE
SLAB PIE
WITH A CHEDDAR CHEESE CRUST
Serves 12 to 15
Initially, I thought I would call this Old-Fashioned Apple Slab Pie—
but a few things happened along the way. I started thinking about
how much I love cheese and apples together, so I added a Cheddar
Cheese Crust. And apples made me think about New England and
fall, and before I knew what was happening, maple syrup and maple
sugar had found a home. This may not be Norman Rockwell’s apple
pie, but I bet he’d pull up a chair and dig right in.
Make Ahead: Stir together the filling several hours or up to 1 day in
advance.
CHEDDAR CHEESE CRUST
2½ cups plus 2 tablespoons (325 g) all-purpose flour
16 tablespoons (225 g) unsalted butter, cubed and frozen for 20 minutes
4 ounces (113 g) extra sharp cheddar cheese, preferably orange, cold, half
grated and half roughly chopped into almond-sized pieces
¼ teaspoon salt
½ cup (120 ml) ice water
FILLING
½ cup (100 g) granulated sugar
¼ cup (56 g) maple sugar or 2 tablespoons maple syrup
¼ cup (30 g) all-purpose flour
