S andwich cookies can be made with crispy cookies, like
gin ge rsnaps and shortbread, soft cookies (think whoopee pies
and chewy chocolate cookies), and every kind in between. They’re
easy to make, fun to eat, and always impress.
Follow this simple procedure for building a perfect sandwich
cookie every time:
1. Allow your cookies to cool completely.
2. Pair like-size cookies toge ther.
3. Turn one of each pair upside down; this one will receive the
filling.
4. Use a small offset spatula, a pastry bag, or the back of a small
teaspoon to spread the appropriate amount of filling on the
bottom cookie.
5. Carefully place the top cookie over the filling, and press lightly
until the filling comes to the edges. (Some cookies are more
delicate than others; apply even pressure by using both hands
and picking the sandwich up, if necessary.)
