E ven though they belong in a category called Refrigerator
Cookies in most books, I like to think of these sliced cookies as
Icebox Cookies. For me, the name evokes a romantic era I’ve
probably only read about: one with mothers in aprons, pulling
sheets of cookies from the oven as their kids arrive home from
school. Whatever you call them, these cookies are made with a
firm dough that can be rolled in a log, chilled in the refrigerator (or
icebox), sliced, and then baked.
