The reason you want to use only egg whites in the cake batter is that this
helps keep the batter blue. Yolks turn the batter slightly green. Cotton candy
can be found at candy stores and in many supermarkets in sealed 6-ounce
plastic bags. A 3-ounce clump of cotton candy yields enough for this recipe.
If you want to use pink cotton candy, use strawberry yogurt and pink food
coloring in the cupcake batter. When using food coloring, it is best to add a
little at a time; you can always add more, but you can’t remove it if you add
too much.
