ZUCCHINI SPICE MUFFINS

               Shredded zucchini is an abundantly available ingredient in summer, when
               backyard gardens burst with the green squash. It seems as if you look in the
               garden one day and don’t see any zucchini on the plants, but overnight they
               appear and swell and by the next morning they are torpedo size. The very large
               zucchini aren’t fit for the sauté pan, but they are perfect for shredding and adding
               to cakes, cookies, and these cinnamon-scented muffins.
