CHUNKY PEANUT BUTTER MUFFINS

               What could be more tempting to a peanut fan than a peanut butter muffin, made
               with chunky peanut butter? These four-ingredient muffins are fast to make, and
               the addition of chocolate chips is a surprise bonus.




                     MAKES 12 MUFFINS (2½ INCHES EACH)

                     PREPARATION TIME: 10 MINUTES
                     BAKING TIME: 20 TO 23 MINUTES




               Vegetable oil spray for misting the pan
               1 package (17.8 ounces) chocolate chip muffin mix

               1 cup milk
               ½ cup chunky peanut butter
               1 large egg

                  If you want less chunky muffins, use smooth peanut butter. And should you

                  want to really cram these with flavor, fold ½ cup butterscotch chips into the
                  chocolate chip muffin mix.




               1. Place a rack in the center of the oven and preheat the oven to 400°F. Mist the

               bottom of 12 muffin cups with the vegetable oil spray. Set the pan aside.


               2. Place the muffin mix in a large mixing bowl and make a well in the center.
               Place the milk, peanut butter, and egg in the center of the well and stir the wet
               ingredients with a fork to combine and break up the egg yolk. Stir the wet and
