pie that day.
Meringue pies are delicious to eat, but their pleasures are
admittedly fleeting. The short shelf life of a meringue pie makes
it necessary to enjoy it as fast as you can. In fact, I suggest
making the crust and filling for these kinds of pies in advance,
while leaving the meringue topping off until a few hours before
you’re ready to serve. Then whip, mound, bake, and cool. That
way you can avoid the weeping (from the pie and yourself) and
everyone can enjoy the billowy masterpiece.
