if you are a frequent baker, it might be better to use a ceramic or
                metal  pie  plate.  Then  again,  while  writing  this  book,  I  tested  and
                retested several pies a week in a good old Pyrex pan without any

                problems—and I would say that earns me the “frequent baker” title!
