Put the puréed pumpkin flesh in a cheesecloth-lined colander
or sieve, and place the colander over a bowl. Refrigerate
overnight. By morning the puréed pumpkin will have exuded up
to a cup of liquid, which you should discard.
Sealed in an airtight container, the strained purée will keep in
the refrigerator for a few days or in the freezer for a few months.
