Simple Roasted Sweet Potatoes
Makes 2½ cups sweet potatoes

sweet potatoes, baked in the ashes and carefully wiped so that you could eat the good

Sometimes it’s the simplest food preparations that let the ingredients
shine. These roasted sweet potatoes are seasoned with just a touch
of garlic, thyme, salt, and pepper—embracing the savory side of
sweet.
INGREDIENTS
2 medium sweet potatoes (approx. 1 lb.)
2 tablespoons olive oil
1 cloves garlic, minced
1½ teaspoons fresh thyme leaves
½ teaspoon salt
⅛ teaspoon pepper
INSTRUCTIONS
1 Preheat oven to 375°F. Thoroughly rinse and scrub potatoes with
clean water and pat dry. Cut into ¾-inch cubes and place in a
medium bowl. Add remaining ingredients to the bowl and stir until
well combined.
