Roasted Tomato Deviled Scotch
Eggs
Makes 12 deviled Scotch eggs

These would also be delicious with bacon bits on top—making it
almost a full English breakfast in one deviled egg!
INGREDIENTS
7 eggs, divided
2¼ teaspoons salt, divided
1½ cups cherry tomatoes
1 tablespoon olive oil
¾ cup panko crumbs
12 ounces finely ground breakfast sausage
⅜ teaspoon pepper, divided
Approx. 6 cups vegetable oil
2 tablespoons mayonnaise
¼ teaspoon smoked paprika
1 green onion

INSTRUCTIONS
1 Place 6 eggs and 1 teaspoon salt in the bottom of a medium-sized
