*  You want the reddest apples you can find, since these will be

                   sliced very thin to make rose petals. Bright red apples ensure

                   clean red lines along the edges of the finished rosettes.
                   **  If your apple slices are breaking as you roll them, you may be

                   rolling too tightly. Try rolling the first few slices loosely, leaving a

                   hole in the middle of your finished rose. Then tuck an extra slice
                   or two in the middle after you place it in the tart.
