Thanks to everyone who has taken the time to like the post and to those who've commented and shared images and their experiences. It's super helpful for us and no doubt for others reading. I know many will have added sound deadening material when restoring their vans, this is a question for those who've fitted it afterwards. Do any of you have experience of fitting it to one area at a time and if so which individual areas made the most difference? Was it the engine fire wall, the floor, the cab floor, the doors or walls? I appreciate there are videos online but I can't find one that has fitted it to one area at a time and checked which area made the most difference. Has anyone gone to the extent of using a decibel meter to check?

Can’t help with the one bit at a time as we did ours all at once.
It’s made a huge difference, we also insulated ours at the same time & this too has made a massive difference in both noise & warmth.

I seriously considered having insulation/ sound deadening when we had our van restored. Whilst I hoped I wouldn't have to have any subsequent remedial work I was concerned that insulation would make the job much more difficult if I did. I therefore decided against it. Over cautious perhaps, I don't know. It still gives me food for thought from time to time particularly on those cold mornings.

I have Silent Coat Sound Deadening product on my 68' bay whilst restoring it and can vouch for its effectiveness and ease of installation. All you need is a sharp pair of scissors and wallpapering seam roller (£3-4 from B&Q) The most effective areas to fit are; on the inside of the roof, all doors, side panels and engine deck area. The reduction in the "drumming" you get from a vacuous van, was massively reduced. I went on and installed the product onto the inner front cap, cab floor, rear floor area and floor to engine deck and made it even quieter.
