 Flatbreads – makes 12 pitta sized breads
 INGREDIENTS
‹ 500g strong white bread flour
‹ 5g instant dried yeast
‹ 5g salt
‹ 310g cool water
METHOD
1. Put the flour in a big bowl
2. Put the yeast on one side and the
salt on the other, then make a hole in the middle of the flour and add three quarters of the water
3. Bring everything together to form a loose dough, continue adding the water and mixing until you get a good dough
4. Tip onto a floured surface, knead it for 5 minutes until the dough is nice and shiny
5. Put it in the bowl again with a damp tea towel or cling film loosely over it
6. Wait2or3hoursanditwilldoubleinsize 7. Cut it in 4 and cling film each ball (they freeze well or keep in the fridge for a
week)
8. When you are ready, cut each ball in
3 and either rolling pin or just squash and shape using your fingers to a sort of round or oval ideally about an eighth of an inch or 3mm thick.
9. Put a teaspoon of oil in a frying pan and heat it until the oil is getting close to smoking then tip out the oil (You don’t need the oil, it is just a temperature guide)
10. Put the bread in and keep the pan pretty hot
11. Turn the bread once you get brown bits but before you get black bits
12. Slice into inch wide strips or just tear and share
13. Dip into the hummus you made previously and enjoy a quick and yummy dish
