Nick Gillott’s Hummus and Flatbreads
This is for my friend Val Lewis, our beloved Membership Manager who smiles from ear to ear when I arrive to a camp and give her a tub of this Hummus.
When we go away, we often travel on a Friday afternoon, so the arrival time can be 7pm or later. For simplicity we generally have cheese and biscuits, as there’s little or no prep work and negligible washing up. It isn’t something we have much of at home either... and of course, wine!
“Hummus and fresh flat breads” takes it to the next level and is something that can mainly be done ahead of departure time. Using the chick pea water instead of loads of oil means that it is diet Hummus (or you can eat 3 times as much compared to shop bought)!
Between two days and two hours before going away, make the hummus and dough. It is a revision of the same recipe from issue 149 as I have experimented since then to improve the flavours.
Hummus – generous 2 person serving!
INGREDIENTS METHOD
1 can of chickpeas (don’t bother with a dried bag as they need boiling all winter) – cheap ones are entirely fine
1 heaped dessertspoon of tahini (pureed sesame seeds) – don’t buy supermarket tahini, get Meridian or Cypressa or other brand name
1-2 pinches of salt (the most you can get between finger and thumb)
Juice of 2 lemons (but lemon juice works just as well)
3 tablespoons of olive oil
2 cloves of garlic
A good grind of black pepper
1. Drain the chickpeas and retain the water
2. Add the tahini, salt, juice of 1.5 lemons, olive oil, garlic and pepper
3. Blitz / puree / whizz up the lot until smooth
4. Add more lemon juice and / or salt until the flavour is right, don’t overdo it (normally less than an extra 0.5 lemons is right). This is impacted by the chick peas, so has to be tasted each time!
5. Once the flavour is correct, add the drained chick pea water until the consistency is right (Yes, chick pea water – commercial hummus is about 25% olive oil but you don’t need it for flavour so this is diet hummus!)
6. Put it in an airtight container and it will keep for 7 days. The flavour improves as well.
