MAKE AHEAD
             The roulade can be made 1 day before serving.
             Bake the meringue and prepare the whipped cream
             mixture the day before, and assemble on the day
             you serve the roulade.

             This meringue roulade is best eaten the day it’s
             made, but it can be refrigerated for up to 2 days.
             However, please note that the meringue will soften
             and the strawberries will begin to weep their juices
             into the whipped cream mixture.
