                                     Pulled Pork



                                         Ingredients



               1 tbsp olive oil                                  1.5 tsp chipotle chili powder
               1 tsp cumin                                       3 tsp salt
               ½ tsp black pepper                            2 tsp brown sugar
               3-4 lb pork butt                                 1 onion quartered
               3-4 cloves garlic                                ¼ cup chicken stock
               1 tbsp honey                                      ½ cup orange juice
               1 lime                                                 2 heaping tbsp tomato paste

                                         Lagniappe




               Heat the oven to 350

               Combine chili powder, cumin, salt, pepper, and brown sugar in a small bowl

               Cut the pork into chunks and coat with the spice mixture

               Heat olive oil and brown the pork on each side

               Pour in remaining ingredients and simmer for about 30 minutes

               Cook the seasoned in a covered pan for about 2-3 hours, or until the meat is
               has become very easy to shred.

               Remove the lid and cook uncovered for another 30 minutes

               Remove the pork from the juice and shred well,

               Reduce the pork juice down to a couple of cups and add back into the pork.

               Serve with tortillas, guacamole, lime and sour cream
