            旧时,红焖肉是逢年过节才能享用的珍馐。常用祭拜祖先和神明后的大块猪肉来制作红焖
            肉,大小适中的整块猪肉是用来制作红焖肉的不二选择。客家人操办喜事时,红焖肉更是不
            可缺少的压轴佳肴之一,颜色红润,寓意红红火火,幸福美满。

            ■ Dish Story
            Meizhou’s preserved mustard is made from large vegetables, which distinguishes it from the
            Huizhou’s version. Some people refer to Meizhou’s preserved mustard as “meicai”, while others
            believe the name originated from a girl named Amei in the village who made particularly delicious
            mustard. Mei city’s preserved mustard require soaking, drying and then steaming, and is available
            in both lightly dried and original flavours.
