              Uses of starch:


                ▪  As a component of dusting powder.

                ▪  In the form of suspension, it is used as anti-dote for iodine poisoning.

                ▪  Disintegrating agent in tablet-making.

                ▪  Diluent agent in tablet making.

                ▪  Emollient (Glycerin of starch).


                ▪  Starting material for the preparation of liquid glucose, dextrose, maltose and
                   dextrins.


                                                     2) Dextrin


                     They are obtained from starch by enzymatic degradation (diastase) or by

              incomplete acid hydrolysis. The degradation products vary in molecular weight

              and color produced with iodine in the following decreasing order:


                           Amylodextrin                 Blue color with iodine.



                         • Erythrodextrin               Reddish-brown with iodine.


                         • Achrodextrin                 No color with iodine.



              Uses:         1)  In  infant  nutrition  (prevent  the  curdling  of  milk  in  baby’s

              stomach).            2) As substitute for gums.


                                                    3) Glycogen



                ▪  also known as animal starch

                ▪  Stored in muscle and liver

                ▪  Present in cells as granules (high MW)

                ▪  Contains both  (1,4) links and  (1,6) branches (more frequent than in

                   starch).  The  fine  structure  has  been  indicated  to  be  similar  to  that  of

                   amylopectin, but more highly branched.
