Adulterants
Japanese Ginger mostly produced by Zingiber mioga Roscoe. It differs by
the characters of its starch granules, which are mostly compound and by its volatile
oil which differs in physical properties from that of Jamaica Ginger.
Exhausted Ginger generally in the form of powder easily detected by the low
percentage of the water-soluble extractives as well as by the presence of
gelatinized starch.
Foreign starches, cereal products, saw dust, Curcuma to restore color
and Capsicum to increase pungency. Foreign starch, cereal products and saw dust
are easily detected microscopically. Curcuma is detected microscopically and
chemically (see under curcuma). Capsicum is detected microscopically and by
having a pungent taste not destroyed by boiling with caustic alkali.
