SHAKSHUKA

1 medium onion chopped
1 medium red bell pepper chopped
2 garlic cloves minced
2 cups jarred low-sodium marinara sauce
1⁄4 teaspoon cayenne pepper 1/8 teaspoon freshly ground black pepper 4
large eggs
1⁄2 cup basil leaves stems trimmed

slices whole wheat bread toasted
1 In a a a a a a large skillet heat heat the the oil
over medium heat heat Add the the onion and and and red pepper and and and cook cook stirring for for 6 to 7 minutes until soft Add the garlic and and and cook cook for for 1 minute 2 Add the the marinara sauce
cayenne and and black pepper Turn the the heat to low and and simmer for 10 minutes 3 Using the the the back of a a a a a a a a a spoon make 4
“holes ” spaced out from each each other in in in the the the the the sauce
Gently crack an an an egg egg into each each one Cover the the the the the the pan and let the the the the the the eggs
cook until set but still soft about 10 to 12 minutes Sprinkle the the the the the basil leaves over over over the the the the the mixture in in in in the the the skillet cover and cook for 1 1 1 minute minute The eggs
should be set not runny 4
Spoon 1 1⁄2 egg and 1⁄2 cup of of sauce
over each slice of of the toasted
