Eastern Tent Caterpillars Hatching Earlier In Kentucky
Due to unseasonably warm weather, Eastern tent caterpillar eggs are hatching earlier that usual. University of Kentucky College
of Agriculture research has proven that the caterpillars caused outbreaks of mare reproduc- tive loss syndrome (MRLS), which can cause early- and late-term fetal losses as well as weak foals. About 30 percent of the foal crop was lost during the 2001-02 MRLS outbreak, with the state suffering an economic loss of around $336 million in all breeds of horses. Horse farms are encouraged to check wild cherry and related trees for the caterpillars to determine whether management is necessary, including foliar sprays, removal of trees, and removal of pregnant mares from pastures with the trees.

Danner set a new 300-yard record at Portland Meadows on Feb. 27.

a 102 speed index. The previous mark of :15.550 was set in 1995 by Thinkin Strawfly. Bred by Hayden Brothers Ranch, Danner is owned by Yaqueline Ibarra and was trained by Hector Magallanes. The gelding has
now won seven of 17 starts and earned over $43,000 in his career.
ELCR Receives Land Stewardship Grant
The Equine Land Conservation Resource (ELCR) received a grant from the Dudley T. Dougherty Foundation to further education on
Hialeah Park in Hialeah, Florida, recently announced its 2011-12 meet leaders. Rancho Los Dos Potrillos, LLC was named Owner of the Meet, Charlton Hunt was Trainer of the Meet, and Alex Baldillez, Jr. was Jockey of the Meet.
APHA Celebrates Founding Day
American Paint Horse Association (APHA) founders and staff celebrated their 50th anni- versary at a luncheon on Feb. 16 at a Chili’s restaurant, the site of the former Curtwood Hotel where organizational meetings were held in the early ‘60s. Celebrants included Rebecca Tyler Lockhart, who spearheaded the first meeting, founder Junior Robertson, as well
as former executive directors Sam Ed Spence and Ed Roberts. A framed shadow box will be displayed in honor of the original site, and a historical marker is also planned.
Large Animal Rescue Training
Eastern Kentucky University in Richmond will offer Large Animal Emergency Rescue Training from March 30 through April 1. Open to students, professionals and the public, training will include 30 hours of classroom instruction and hands-on experience with live animals. Former Trinity Meadows Shut Down
Texas authorities on Feb. 5 raided and shut down the former Trinity Meadows racetrack in Willow Park because the unlicensed race- track was conducting illegal gambling. About 1,500 people were at the track when owners Maynard and Dominga Cross were arrested and charged with engaging in organized

3 C. cooked, chopped chicken 2 (4 oz.) cans of green chiles,
lightly drained
1 pkg. (8 oz.) cream cheese, cubed 1 can white or black beans, rinsed
& drained
Sauce:
2 T. butter
1/2 C. chopped onion (about 1/2
med. onion)
2T.flour
1/3 C. chicken broth
1/4 C. milk
1/4 t. salt
1/4 t. pepper
1 can (7 oz.) green chile enchilada
sauce
1/2 C. sour cream
8 oz. (about 2 C.) Monterey jack
cheese, shredded
8 med. (soft taco size) flour
tortillas
Handful of chopped fresh cilantro

DIRECTIONS:
Creamy Green Chile Chicken Enchiladas

Preheat oven to 375 degrees. In a medium bowl, combine the softened cream cheese and green chiles. Mix well. Add the chicken and black beans. Mix to combine. Set aside. In a large nonstick skillet, melt the butter over medium heat. Add the onion and cook, stirring occasionally, until the onion softens and starts to turn translucent, about 3-4 minutes. Sprinkle the flour over the onions and stir well. Cook for 1 minute, stirring. Slowly whisk in the chicken broth and milk. As you whisk and the mixture cooks, the flour will get less lumpy around the onions and the mixture will become smooth. Cook over medium heat until the mixture is bubbling and has thickened, about 4-5 minutes. Remove the skil- let from the heat and stir in the enchilada sauce and sour cream. Lightly grease a 9X13-inch baking dish. Spread about 1/4 cup of the sauce on the bottom of the dish. Fill each tortilla with about 1/2 cup of the chicken/cream cheese filling. Top with a small handful of shredded cheese, a couple tablespoonfuls for each enchilada. Save at least 1/2 cup cheese for the top of the enchiladas. Roll the tor- tillas up and place seam side down in the prepared baking dish. Continue filling enchiladas until the dish is full (I can easily fit 8 enchiladas in one pan). Pour the white sauce over the top of the enchiladas. Top with remaining cheese. Bake for 20-30 minutes until the enchiladas are bubbling, hot and lightly browned. Sprinkle fresh cilantro over the top and serve.
