 Knotty Wood Almond BBQ Pellets
Last month Barbecue News Magazine released the story of this brand-new start-up family business based in Califor- nia. This month we give you the insight into this new bar- becue and grilling product that is setting up to become the next must-have for all serious barbecuers.
Knotty Wood Barbecue Company is the first company to make almond wood into pellets. Almond, walnut and other fruit woods have been overlooked for years as an authentic BBQ wood. In 2004 Barbecue News was able to test cook with grape vine chunks and walnut wood from trimmings. From those tests, we knew those woods were great flavor makers and would one day become a major player in the BBQ fuel market.
Our first text compared the burn time of one pound of almond pel- lets vs. another significant brand name pellet to see if the almond wood would burn longer. Our test proved exactly what had been ad- vertised...by a total of 200 min- utes more in a single 20 lb. bag. That comparison shocked us, but after duplicating the test again, we came up with the same exact results.
Our second test was looking for
taste trends with the almond wood. We were surprised by the mild flavor that came from hot and fast cooking or low and slow process. The veggies we cooked also tasted very well with the light kiss of smoke from the pellets. Our fa- vorite protein was the baby back ribs we cooked using a competition style recipe that including wrapping and glaz- ing the ribs. The smoke flavor on those ribs would match the smoke flavor generated from a stick burner.
We have burnt about 40 pounds inside our REC TEC Bulls- eye and REC TEC Bull grills while testing these pellets. We have found very little ash inside the pit or on our meat after longer cooks, and they have fired up on the first attempt every time we have used them.
