Rooftop BBQ Competition BBQ Class featuring Pitmaster, Andy Allen
I had the privilege of assisting, Andy with his class on December 7th at the BBQ Headquarters located in Simi Valley. Andy did a tell-all class on competition BBQ cooking. While a lot of teams tell you they are doing tell-all classes, Andy no doubt
delivered the detailed plan for his students on how to improve their competition scores and standings in the team of the year race.
Andy methodically went through the selection and brand of pro- teins he uses to compete. Additionally, Andy showed students how to trim each protein, what temperature he cooks each protein and his timeline for each. Moreover, I was impressed with Andy's willingness to share his wrapping methods for each protein and
Andy Allen, preps his pork butts using the Matt Dalton pork wrap from the squeeze bottle
present each protein for the judges at BBQ competitions.
Andy's class lasted about eight hours and no students left the class until all their questions were answered.
As a veterean in BBQ competitions, I even picked up a couple of nuggets (bits of critical information), that I plan on using this up and coming competition season.
Well done, Andy and keep spreading that wealth of BBQ knowl- edge to our community.
Steph
